“2nd Quarter Cranberry Salad Recipe Winners”

The winning recipes from our “Cranberry Salads Recipe Contest” showcased a fantastic assortment of salads ranging from main course to side dishes.    Our judges continue to struggle to select only three winners.  Thank you for the fabulous  entries.

Congratulations to Miranda Sears for winning first place with her “Turkey Cranberry salad with cranberry dressing” (recipe below), Sandra Wilts for her second place      “ Cranberry Waldorf Salad” and  Hidemi Walsh  her “Apple Cranberry Noodle salad with Peanut Butter Mayo-gurt Dressing.   All the winners receive prizes from the WCDC and have their recipes featured in our “Cranberry Chatter” newsletter and on our website!  Click for the full recipes of all this quarter’s winners.  To enter our current recipe contest, please click here for all the details!
1st Place: “Turkey Cranberry Salad with Cranberry Dressing”

List of Ingredients:
1 c. Sweetened dried cranberries
1 Bunch salad greens
1 med. potato, cooked, peeled & cut into chunks

1/2c. Mandarin oranges sections

Radish slices

2 c. Cooked Turkey cubed 1c.

1 c. Sliced Cucumber 1

1 c. Sliced fresh mushrooms

Cranberry Dressing:
1c. Whole cranberry sauce
1/8 tsp. cinnamon
1/8 tsp. nutmeg
3/4 c. Mayonnaise

Directions/Steps
Line a large serving platter with desired salad greens. Arrange turkey with potato pieces, mandarin oranges, cucumbers and mushrooms over greens. Sprinkle sweetened dried cranberries over entire salad and garnish with radish slices. To prepare dressing place the cranberry sauce, mayonnaise and spices in a blender and blend until smooth. Serve salad with dressing on the side. Enjoy

2nd Place: “Cranberry Waldorf Salad”

List of Ingredients:

1 1/2 c. Chopped Cranberries, fresh or frozen

1c. Chopped Red Apple, unpeeled

1c. Chopped Celery

1c. Seedless green grapes, halved

1/3c. Craisins

1/4c. chopped walnuts (optional)

2T. Sugar

1/4 t. ground cinnamon

1 (8oz.) Carton of vanilla low-fat yogurt.

Directions/Steps:

Combine first 7 ingredients. Toss.  Mix cinnamon, yogurt and combine with all 7 ingredients.  Can garnish with cranberries and mint leaves.

3rd Place:  “Apple Cranberry Noodle salad with Peanut Butter Mayo-gurt Dressing”

List of Ingredients:

1 Small Gala Apple

1 package (3 oz) Instant Ramen Noodle

1 cup Sliced Celery

1/2 cup Dried Cranberries

8 tablespoons Mayonnaise

4 tablespoons Plain Yogurt
4 tablespoons Peanut Butter, crunchy type Salt and Black Pepper to taste

Directions/Steps
1. Peel apple, cut into four, core and dice small.
2. In a sauce pan, boil water and cook Ramen noodle followed by the directions of the package. Then drain in a colander and rinse in running cold water. Drain well.
3. Make dressing. In a large bowl, mix together mayonnaise, yogurt and peanut butter.
4. Put the Ramen noodle, celery, apples and dried cranberries into the bowl. Add salt and black pepper to taste. Mix to blend well.
