Cranberry Oatmeal Crisps Cookie

  • 2~Sticks Butter
  • 1C. Granulated Sugar
  • 1/2c. Brown Sugar (firmly packed)
  • 2 Eggs
  • 1tsp. Vanilla
  • 1tsp. Orange extract
  • 1 1/2c. Flour
  • 1tsp. Baking soda
  • 1/2tsp. Baking powder
  • 1/2tsp. Salt
  • 1tsp. Cinnamon
  • 2 1/2c. Old fashioned oatmeal (quick cooking)
  • 1~6oz. Sweetened dried cranberries
  • 1c. Butterscotch chips
  • 1/2c. Pecans

Preheat Oven to 375 degrees. Lightly grease two large cookie sheets. In small bowl stir together flour, baking soda, baking powder, salt and cinnamon. Set aside. In standing mixer, on meduum low speed, cream butter and sugars. Add eggs, vanilla and orange extract. Mix well. Add flour mixture until batter is smooth. Add oatmeal, cranberries, butterscotch chips and pecans. Mix until blended. Drop by well-rounded tablespoon onto cookie sheet, one dozen to a sheet. Bake for 12-14 minutes. Allow to cool on sheet before removing to rack to cool completely. Makes 4 dozen cookies.
