Jeanette’s Cranberry Cookies

Jeanette Harmel of Tomah submitted this cranberry cookie recipe.

  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 2/3 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup brown sugar, packed firmly
  • 1/3 cup granulated sugar
  • 1/2 cup sweetened dried cranberries
  • 1/2 cup white chocolate chips
  • 1/2 cup nuts, chopped

Preheat oven to 350 degrees F. Grease a cookie shet or line with parchment paper.

In a medium bowl, beat together the butter, egg and vanilla until fluffy. Add the remaining ingredients, mixing by hand, until well blended.

Drop by heaping spoonfuls onto prepared baking sheets. Bake for 8 to 10 minutes, or until edges start to brown.

Cool on baking sheets or remove to wire racks to cool. Makes 18 cookies.
