Granny Cranny’s No Bake Cranberry Orange Fluff Bars

Instructions: Prep Time: 15 minutes Servings 9

Crust:

  • 40 Nilla wafers, finely crushed
  • ½ stick melted butter
  • 1 tablespoon sugar
  • 1 teaspoon orange zest

Filling:

  • 1 ½ cups dried cranberries
  • 1 teaspoon orange zest
  • 2 tablespoons orange juice
  • 1 (8 ounce) package Cream cheese, softened
  • 2 tablespoons sugar
  • 1 package (3 ounces) cranberry Jell-O
  • 1 ½ cups dried cranberries
  • 1 teaspoon orange zest
  • 1 (8 ounce) tub whipped topping, thawed

In a medium bowl, stir together cookies, sugar and orange zest with a fork until moistened. Press into a 9 inch square pan. Freeze uncovered until ready to use. In a food processor place cranberries, orange zest and orange juice. Pulse until smooth. In a large bowl mix cream cheese, sugar, and cranberry Jell-O. Mix on medium speed until well combined. Scrape sides of bowl with spatula and mix again for about two minutes. Add cranberry mixture and stir until combined. Fold in whipped topping with a spatula. Take crust out of freezer. Using a spatula spread cranberry mixture evenly on top of crust. Refrigerate covered with plastic wrap at least four hours or overnight. Garnish with whipped topping and dried cranberries and orange slices if you choose.
