This is a good recipe to make with the young bakers in your household as it utilizes a prepared muffin mix. It’s also quick to make when you want to have fresh-baked muffins to serve, but don’t have a lot of time.
- 1 cup plus 2 tablespoons milk
- 3/4 cup of sweetened dried cranberries
- 1/2 cup of chopped walnuts
- 1 16.2 ounce apple cinnamon muffin mix
Preheat oven to 425 degrees F. Grease 12 muffin cups or line with paper baking cups sprayed with nonstick cooking spray for easy removal.
In a medium mixing bowl, stir milk into the muffin mix until just moistened. Add the sweetened dried cranberries and walnuts. Fill muffin cups 2/3rds full.
Bake for 11 to 14 minutes, or until golden brown and a toothpick inserted in center comes out clean. Allow muffins to cool 2 to 3 minutes before removing from pan.
