Cranberry Vanilla Chip Muffins

Donna Justin of Justin Trails Bed-and-Breakfast Resort, Sparta, shared this recipe with us. It’s one of the muffin recipes she makes for guests who stay at her country inn.

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 2/3 cup butter, melted
  • 2 eggs
  • 3/4 cup plain yogurt
  • 1/4 cup buttermilk
  • 1 cup vanilla chips
  • 1 cup fresh or frozen cranberries, chopped
  • 1 teaspoon almond extract

TOPPING

  • 1/2 cup butter, melted
  • 1/2 cup sugar

Preheat oven to 375 degrees F. Spray muffin cups with non-stick cooking oil. In a large mixing bowl, mix flour, baking powder, baking soda and salt. Set bowl aside.

In a medium bowl, beat sugar and butter until well blended. Add the eggs one at a time, beating well after each addition. Then add the yogurt and buttermilk. And mixture to the dry ingredients and mix until moistened. Fold in the cranberries.

Bake 18 to 24 minutes, or until muffins test done. Yields 12 standard-size muffins.
