Cranberry Salsa

If you like salsa, here’s one made with cranberries!

  • 1 cup fresh cranberries
  • Juice of 1/2 orange
  • 1/3 cup sugar
  • 2 red bell peppers, roasted, peeled, seeded and diced
  • 3 tablespoons chopped cilantro
  • 2 tablespoons toasted pecans, chopped
  • Zest of 1/2 lime
  • Pinch of Salt

Blend cranberries, orange juice and sugar for 30 to 45 seconds in a food processor. Transfer to a mixing bowl and add remaining ingredients. Let salsa sit for 30 minutes or longer before serving.

Serving size is 2 tablespoons. Yield: 1 1/3 cups.
