3rd – Cranberry Pecan Muffins, submitted by Sheila Zahorik, Eau Claire, WI
- 2 C Flour
- 3/4 C Sugar
- 3/4 Tbsp Baking Powder
- 1/2 tsp Salt
- 1/2 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1 Egg
- 1 c milk
- 1/2 C Melted Butter
Combine flour,sugar, baking powder,salt, cinnamon and nutmeg.
Whisk egg,milk, and melted butter together. Stir into dry ingredients until just moistened.
Stir in 1 C chopped cranberries, 1/2 C chopped pecans, 3 Tbsp sugar.
Fill 12 muffin cups 3/4 full. Bake at 400 degrees for 20 minutes. Cool 5 minutes before removing to wire rack. Serve warm.
