Cranberry Pancakes with Cranberry Sauce

Pancakes:

  • 1 Cup Flour
  • 1/3 Cup Cornmeal
  • 3 Tbsp Sugar
  • 1 Tbsp Baking Powder
  • 1/4 tsp Salt
  • 1 Egg
  • 1 Cup Milk
  • 1/4 Cup Sour Cream
  • 1/4 Cup Melted Butter
  • 1/2 Cup Chopped Cranberries

Mix all ingredients together (some lumps will remain). Pour (about 1/4 Cup) onto a griddle sprayed with cooking spray. Brown on one side, flip and brown on other.

Cranberry Sauce:

  • 2 Cups Cranberries
  • 2 Cups Water
  • 1 Cup sugar
  • 1/3 Cup Maple Syrup

In kettle, combine cranberries,water,and sugar. Simmer for 8-10 minutes, cool. Put in blender and blend until smooth. Add maple syrup. Serve over pancakes.
