Cranberry Glazed Meatloaf

Rachel McBride of Neillsville, Wis., submitted this entry, which won second place in our August 2008 “Crantastic Main Dishes” recipe contest. “The glaze has a hint of autumn to it and works great with any type of meat,” Rachel wrote.

Cranberry Glaze

  • 1/2 cup whole berry cranberry sauce
  • 1/4 cup brown sugar, packed
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cloves

  • 2 pounds ground turkey
  • 1 cup dried cranberries
  • 1 cup bread crumbs
  • 1 cup milk
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Preheat oven to 350 degrees F.

In small mixing bowl, combine the whole berry sauce, brown sugar, cinnamon, ginger, nutmeg, allspice and cloves, set aside.

Spray a 9×5-inch loaf pan with nonstick cooking spray. In medium mixing bowl, combine the ground turkey, dried cranberries, bread crumbs, milk, eggs, salt and pepper. Put the meat mixture into the pan, shaping it into meat loaf form. Pour the cranberry glaze over the top. Bake for 1 hour.
