Using a prepared cranberry chutney — we tested with Wisconsin Wilderness cranberry chutney — makes this is a quick and easy chicken dish to prepare.
- 4 boneless, skinless chicken breasts
- salt and pepper (to taste)
- 1 cup cranberry chutney
- minced red onion (optional)
Salt and pepper four boneless, skinless chicken breasts. Add minced red onion (or shallots), if desired. Place in a baking dish and pour 1 cup cranberry chutney over top. Cover and bake at 350 degrees F. for 30 minutes, or until chicken is done.
