Cranberry Chicken

Josephine Parkhurst of Janesville, Wis., placed third with this recipe in our August 2008 “Crantastic Main Dishes” contest. Josephine is a regular contributor to our quarterly recipe contests.

  • 6 boneless chicken breast halves
  • 1 16-ounce can whole berry cranberry sauce
  • 1 large tart apple, peeled and chopped
  • 1/2 cup raisins
  • 1/4 cup chopped walnuts
  • 1 teaspoon curry powder

Preheat oven to 350 degrees F.

Place chicken in a 13x9x2-inch baking dish coated with nonstick cooking spray. Bake uncovered for 20 minutes. Meanwhile, combine the cranberry sauce, applies, raisins, walnuts and curry powder. Spoon mixture over the chicken and bake 20 to 25 minutes longer, or until the juices run clear.
