Cranberry Cherry Cheesecake Pancakes

1st Place-Cranberry Cherry Cheesecake Pancakes, submitted by Marcy Kamery, Blasdell, NY

  • 1/2 C. White Flour
  • 1/2 C. Graham Cracker Crumbs
  • 2 1/2 Tbsp Sugar
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1 Egg
  • 1 C. Buttermilk
  • 3 Tbsp Butter, melted
  • 1/2 tsp Almond Extract
  • 1 C. Sliced Fresh Cherries
  • 3/4 C. Dried Cranberries
  • 1 tsp Vanilla Extract
  • 2 oz. Cream Cheese.softened
  • 3 Tbsp Cream

Mix flour, graham cracker crumbs, 1 Tbsp sugar,baking powder, baking soda and salt together in a medium bowl. Stir in egg,buttermilk, 2 Tbsp melted butter, and almond extract until just combined. Stir in cherries and cranberries. Pour 1/3 cup scoops of batter onto a greased nonstick skillet over medium heat. Flip the pancakes when bubbles start to appear on top, after about 3 minutes. Cook the other side until golden brown. Makes 6 pancakes.

Mix cream cheese,cream, and remaining 1 1/2 Tbsp sugar, 1 Tbsp butter, and vanilla extract in a small bowl until smooth. Drizzle over pancakes. Top with dried cranberries, if desired. 3 servings.
