Cranberry Banana Bread

For the 2005 Warrens Cranberry Festival, we made three kinds of cranberry bread. This is one of the recipes. The other two were Cranberry Zucchini Bread and Donna’s Cranberry Bread, which you’ll also find on our Web site.

  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup bananas, mashed
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 cups flour
  • 1/2 cup walnuts (optional)
  • 1 cup sweetened dried cranberries

In a mixing bowl, cream vegetable oil with sugar, eggs and bananas. Add the dry ingredients. Mix thoroughly, but do not over beat. Fold in walnuts and sweetened dried cranberries. Pour batter into a large greased bread pan. Bake at 350 degrees for 60 to 90 minutes. If using mini loaf pans, decrease baking time to about 40 minutes. Makes 1 large loaf or 3 mini loaves.
