Cherry Berry Bars

  • 1 cup all purpose flour
  • 2 cups whole wheat flour
  • 1/4 teaspoon salt
  • 1 cup Turbinado sugar
  • 1 cup cold butter, cubed
  • 3 eggs, beaten
  • 3 egg whites, beaten
  • 1 cup granulated sugar
  • 1/2 cup honey
  • 1 cup low fat Greek yogurt
  • 1/4 cup flour
  • 4 cups fresh (or frozen, thawed and drained) cherries, pitted
  • 2 cups fresh cranberries

Instructions: Preheat the oven to 400 degrees. In a food processor, pulse the flours, salt, Turbinado sugar and butter until a coarse meal. Press all but 1 cup of the crust mixture into a greased 9×13 pan. Bake 10 minutes. Cool. Meanwhile, mix together the eggs, egg whites, sugar, honey, yogurt and flour. Stir in the cherries and cranberries. Spread the cranberry mixture over the cooled crust. Sprinkle on reserved crust mixture. Bake for 45 minutes, until lightly brown. Cool completely before slicing into squares. Like a portable pie, these wholesome bars are wonderful bake sale items!
